Baguette Brunch Bake

A delicious and versatile dish for Sunday brunch. Fill a baguette with a vegetable and egg filling, season, and bake. Make it gluten-free and vegetarian.

  • 2 demi baguettes
  • 2 tbsp margarine or butter
  • 3 beyond sausage links
  • 6 large eggs
  • ¼ cup heavy cream I like to sub coconut milk
  • ½ cup grated cheddar cheese
  • 1 tbsp fresh chives, chopped
  • 1 clove fresh garlic, minced
  • dash hot sauce I like tabasco or cholula
  • ½ tsp smoked paprika
  • salt and pepper to taste

  • ½ cup bell pepper, diced
  • ½ cup spinach, chopped
  • ½ cup mushrooms, chopped
  • ¼ cup sundried tomatoes
  • ¼ cup onion, diced

  • preheat oven to 350°F
  • cut out the center of the baguettes to make a V shape for the filling
  • brush the center of the baguettes with melted butter and toast in the over for 5 minutes
  • in a skillet/frying pan brown the sausage and veggies, divide this filling between the baguettes
  • in a mixing bowl whisk together the eggs, cheese, hot sauce, cream, chives, garlic, and spices
  • pour this egg mixture over top of the filling in the cutout center of the baguettes
  • Bake for 15 to 20 minutes until the eggs are puffed and set
  • enjoy!
