  • 1 cup carrot, shredded
  • ½ cup walnuts
  • 2 tbsp ground flaxseeds
  • cup coconut, shredded
  • 1 cup rolled oats
  • ¼ tsp ginger, ground
  • 2 tsp cinnamon
  • ½ cup soft pitted dates
  • ¼ cup almond, peanut, or sunflower butter
  • 1 tsp vanilla
  • 1 tbsp maple or agave syrup

  • Blend dry ingredients first, add wet ingredients and blend it all together.
  • Scoop and roll into balls this will make about 12.
  • chill before serving.
