Ingredients

  • 6 butter lettuce leaves
  • 1 can of salmon can sub for canned tuna or chicken
  • 2 tbsp mayonnaise I use Earth Island brand, it's soy-free and egg-free
  • 1 tbsp dijon mustard I use Kuhne extra hot or traditional grainy dijon
  • ¼ cup raisins
  • 1 medium carrot, shredded
  • ½ cup celery, chopped
  • 1 tbsp yellow curry powder
  • juice of 1 lemon or lime
  • 1 tsp Spike seasoning can sub for garlic powder, salt and pepper
  • ¼ cup pepitas (pumpkin seeds) can sub for sunflower seeds

Instructions

  • Wash and dry your lettuce, use the biggest pieces for the lettuce wraps
  • Drain your can of salmon, add all ingredients and seasoning to the bowl, mix thoroughly
  • Assemble your lettuce wraps, top with sriracha if desired and serve!
