Curry Salmon Salad Lettuce Wraps

Ingredients
- 6 butter lettuce leaves
- 1 can of salmon can sub for canned tuna or chicken
- 2 tbsp mayonnaise I use Earth Island brand, it's soy-free and egg-free
- 1 tbsp dijon mustard I use Kuhne extra hot or traditional grainy dijon
- ¼ cup raisins
- 1 medium carrot, shredded
- ½ cup celery, chopped
- 1 tbsp yellow curry powder
- juice of 1 lemon or lime
- 1 tsp Spike seasoning can sub for garlic powder, salt and pepper
- ¼ cup pepitas (pumpkin seeds) can sub for sunflower seeds
Instructions
Wash and dry your lettuce, use the biggest pieces for the lettuce wraps
Drain your can of salmon, add all ingredients and seasoning to the bowl, mix thoroughly
Assemble your lettuce wraps, top with sriracha if desired and serve!
