Immune Boosting Chicken Noodle Soup
this recipe is a homemade chicken noodle soup with tons of natural immune-boosting ingredients to help get you through the winter.

1 air fryer
1 saucepan
1 cutting board
1 chef's knife
- 1 tbsp olive oil
- ½ medium onion, chopped
- 2 celery stalks, chopped
- 2 medium carrots, diced
- 3-5 cloves fresh garlic, minced
- 1 inch knob of fresh ginger, minced
- 1 tsp turmeric powder
- ½ orange, zest and juice
- 1 broccoli crown, chopped optional
- 1 cup spinach, chopped optional
- 6 cups chicken broth
- 1 cup pasta noodles, I prefer rotini
- 2 chicken breasts, cooked and shredded
- 1 tsp ground black pepper
- 2 tbsp mayo optional
brush chicken breasts with mayo, sprinkle with pepper and cook in the air fryer (or whatever cooking method you prefer) at 400°F for 20 minutes, flipping halfway through
In a large saucepan over medium heat, saute your onion, celery, and carrots in olive oil for 2-3 minutes, add garlic and ginger, saute for an additional 2 minutes until fragrant
add turmeric, juice and zest of orange, broccoli and the chicken broth
bring to a boil, add pasta and simmer for 5-10 minutes or until the chicken is ready
shred the chicken and add to soup
add your spinach until wilted, season with salt and pepper as desired
serve with your favorite saltine crackers.
