Immune Boosting Chicken Noodle Soup

this recipe is a homemade chicken noodle soup with tons of natural immune-boosting ingredients to help get you through the winter.

Equipment

  • 1 air fryer
  • 1 saucepan
  • 1 cutting board
  • 1 chef's knife

Ingredients
  

  • 1 tbsp olive oil
  • ½ medium onion, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, diced
  • 3-5 cloves fresh garlic, minced
  • 1 inch knob of fresh ginger, minced
  • 1 tsp turmeric powder
  • ½ orange, zest and juice
  • 1 broccoli crown, chopped optional
  • 1 cup spinach, chopped optional
  • 6 cups chicken broth
  • 1 cup pasta noodles, I prefer rotini
  • 2 chicken breasts, cooked and shredded
  • 1 tsp ground black pepper
  • 2 tbsp mayo optional

Instructions
 

  • brush chicken breasts with mayo, sprinkle with pepper and cook in the air fryer (or whatever cooking method you prefer) at 400°F for 20 minutes, flipping halfway through
  • In a large saucepan over medium heat, saute your onion, celery, and carrots in olive oil for 2-3 minutes, add garlic and ginger, saute for an additional 2 minutes until fragrant
  • add turmeric, juice and zest of orange, broccoli and the chicken broth
  • bring to a boil, add pasta and simmer for 5-10 minutes or until the chicken is ready
  • shred the chicken and add to soup
  • add your spinach until wilted, season with salt and pepper as desired
  • serve with your favorite saltine crackers.
