  • mixing bowl

Ingredients
  

  • 2 cups all purpose flour can sub gf flour
  • cups granulated sugar
  • tsp salt
  • 3 large eggs
  • 1 cup extra virgin olive oil
  • cup milk I sub for oat or coconut milk
  • 1 zest & juice of 1 orange or lemon
  • powdered sugar for topping

Instructions
 

  • preheat oven to 350°F
  • add all dry ingredients (sugar, flour, salt) to a mixing bowl and whisk to combine
  • in a separate bowl add eggs, whisk them, add extra virgin olive oil, milk, juice, and zest whisk to combine
  • add dry ingredients to the wet mixture and whisk until there are no clumps
  • add the mixture to a non-stick cake pan
  • bake for approximately 1 hour
  • after the cake has cooled, sprinkle with powdered sugar and serve.
