- 2 cups all purpose flour can sub gf flour
- 1½ cups granulated sugar
- 1½ tsp salt
- 3 large eggs
- 1 cup extra virgin olive oil
- 1¼ cup milk I sub for oat or coconut milk
- 1 zest & juice of 1 orange or lemon
- powdered sugar for topping
preheat oven to 350°F
add all dry ingredients (sugar, flour, salt) to a mixing bowl and whisk to combine
in a separate bowl add eggs, whisk them, add extra virgin olive oil, milk, juice, and zest whisk to combine
add dry ingredients to the wet mixture and whisk until there are no clumps
add the mixture to a non-stick cake pan
bake for approximately 1 hour
after the cake has cooled, sprinkle with powdered sugar and serve.
