Cube your potato, pat dry, add to air fryer, season with seasoning salt and cook at 400°F for 15 minutes. Shake every 5 minutes.
in a frying pan over medium heat, add olive oil, white onion, and saute for 2-3 minutes.
add package of veggie crumbles, black beans, corn, garlic powder, salsa, salt, and pepper, saute for 5-10 minutes. remove from heat and set aside.
cook your oatmeal, place ½ cup each of oats into 2 separate microwave-safe bowls, cover oats with water and cook for 1-1½ minutes.
as soon as the oats are done cooking, add cheddar cheese, and green onions, split evenly to each bowl and mix until melted and combined.
in a small non-stick frying pan, add 1 tbsp butter or margarine and add your eggs, season with salt and pepper, cook to desired doneness.
assemble your bowl, add a portion of the veggie crumble mixture and potatoes, top with a fried egg, sour cream, and salsa. garnish with any extra cheese and green onion.
