This baguette brunch bake is versatile for any occasion. I’m making it again this weekend for Mother’s Day. Simply choose your filling ingredients, I prefer beyond sausage links, sharp cheddar cheese, sundried tomatoes, spinach, mushrooms, and red peppers. Next, pour the egg mixture over top and bake inside of a baguette.

You can also make this gluten-free and vegetarian!

Eggs are one of the most nutritious foods you can eat.

A whole egg contains all the nutrients required to turn a single cell into a baby chicken.

A single large boiled egg contains:

  • Vitamin A: 6% of the RDA
  • Folate: 5% of the RDA
  • B5: 7% of the RDA
  • B12: 9% of the RDA

History of Baguettes

There are several theories on the origins of the French baguette and according to one legend, Napoleon Bonaparte decreed that bread should be made in long thin sticks in order to fit into the pockets of his soldiers.

Another myth suggests that when work began on the Paris Métro in 1898, laborers were brought in from all over France to work on the groundbreaking project. Because of violent arguments between the different groups of men, bakers were asked to create bread that could be torn, rather than cut, so that knives could be outlawed.

One final theory explains that the iconic Gallic bread was the cause of the French Revolution since bread was the mainstay of the French diet and the peasants rioted at the sight of the nobility eating the crusty white sticks while they faced shortages and famine.

No one really knows who invented the modern-day baguette, but it’s said that the man who invented the croissant, Vienna-born baker August Zang, facilitated the loaf’s creation by installing France’s first steam oven, which made it possible to bake loaves with a crisp crust and a fluffy center, in his Boulangerie

Baguette Brunch Bake

A delicious and versatile dish for Sunday brunch. Fill a baguette with a vegetable and egg filling, season, and bake. Make it gluten-free and vegetarian.

Ingredients
  

Ingredients

  • 2 demi baguettes
  • 2 tbsp margarine or butter
  • 3 beyond sausage links
  • 6 large eggs
  • ¼ cup heavy cream I like to sub coconut milk
  • ½ cup grated cheddar cheese
  • 1 tbsp fresh chives, chopped
  • 1 clove fresh garlic, minced
  • dash hot sauce I like tabasco or cholula
  • ½ tsp smoked paprika
  • salt and pepper to taste

Optional

  • ½ cup bell pepper, diced
  • ½ cup spinach, chopped
  • ½ cup mushrooms, chopped
  • ¼ cup sundried tomatoes
  • ¼ cup onion, diced

Instructions
 

Instructions

  • preheat oven to 350°F
  • cut out the center of the baguettes to make a V shape for the filling
  • brush the center of the baguettes with melted butter and toast in the over for 5 minutes
  • in a skillet/frying pan brown the sausage and veggies, divide this filling between the baguettes
  • in a mixing bowl whisk together the eggs, cheese, hot sauce, cream, chives, garlic, and spices
  • pour this egg mixture over top of the filling in the cutout center of the baguettes
  • Bake for 15 to 20 minutes until the eggs are puffed and set
  • enjoy!
