Today Let’s Make – Frank’s Hot Chicken Wings

I was craving hot wings the other day, and I literally hadn’t had them in FOREVER, at least a couple of years, so I decided why not?! That day all they had at the store was drumsticks, and they were absolutely delicious! I made them extra crispy in the air fryer, after marinating them in pickle juice for 2 hours. The sauce was super simple, Frank’s hot sauce mixed with only 3 other ingredients. Serve with blue cheese dip and celery sticks and you have a guaranteed hit for wing Wednesday for years to come.

History of Hot Wings–

Deep-fried chicken wings have always been a staple of Southern cooking.  But the concept of cooking wings in a peppery hot sauce was born in 1964 at the Anchor Bar in Buffalo, New York when co-owner Teressa Bellissimo cooked leftover wings in hot sauce as a late-night snack for her son and his friends.  The guys liked them so much that the Bellissimos put them on the menu the next day.  Served with celery slices and bleu cheese sauce, “Buffalo Wings” were an instant hit.

Dick Winger, who sold hot sauce to the bar, went on the road with Dominic Bellissimo, the owners’ son, to promote the item and sell hot sauce, and the item gradually caught on with restaurant operators around the country.  The concept hit the big time in 1990 when McDonald’s began selling Mighty Wings at some of its restaurants.  KFC rolled out Hot Wings a year later, and Domino’s Pizza introduced its own wings in 1994.  They’ve remained hot ever since.

Frank's hot chicken wings

These hot wings are super simple and delicious. marinate and make them extra crispy in the air fryer.

Equipment

  • 1 air fryer
  • 1 large mixing bowl
  • 1 small mixing bowl

Ingredients
  

  • 1 package chicken wings or legs
  • 1 cup dill pickle juice
  • 1 tsp sea salt
  • 1 tsp black pepper
  • ¼ cup melted butter
  • cup frank's hot sauce sub for any sauce you prefer
  • 1 tbsp lime juice
  • ¼ tsp garlic powder
  • celery sticks for serving
  • blue cheese dressing for serving

Instructions
 

  • marinate chicken wings in dill pickle juice and salt for a minimum of 2 hours or overnight
  • remove from marinade, blot, and season with pepper
  • preheat air fryer to 400°F, cook chicken wings for 20 minutes flipping halfway
  • in a small mixing bowl, stir together butter, hot sauce, lime juice, and garlic powder. save a small amount for serving.
  • after 20 minutes, coat wings with hot sauce mixture and air fry for an additional 5 minutes.
  • remove and coat again in the hot sauce mixture before plating. serve with celery and blue cheese dip.
