Today Let’s Make – Immune Boosting Chicken Noodle Soup
It’s January, it’s freezing cold and snowy, the kids go back to school, and then BAM! Someone gets sick. OR you’re trying everything in your super healthy cooking power so that you don’t get sick! What is your go-to immune-boosting recipe?
Mine is “enhanced” homemade chicken noodle soup. So what’s in this magical soup, you might ask? Well, for starters, lots of vegetables, including broccoli and spinach. For a little extra immune support I add-in, tons of fresh garlic, some freshly grated ginger, turmeric, and then the zest and juice of an orange.

History of Chicken Noodle Soup –
Archaeological evidence shows that people started using poultry to make soups soon after discovering how to boil water. The earliest recorded evidence of chicken soup being used as a medicinal dish dates back to ancient China. In the second century BC, the Chinese medical text, Huangdi Neijing, declared that chicken soup is a “yang food”. A warming dish, to which different therapeutic herbs can be added to cure various diseases.

Immune Boosting Chicken Noodle Soup
Equipment
- 1 air fryer
- 1 saucepan
- 1 cutting board
- 1 chef's knife
Ingredients
- 1 tbsp olive oil
- ½ medium onion, chopped
- 2 celery stalks, chopped
- 2 medium carrots, diced
- 3-5 cloves fresh garlic, minced
- 1 inch knob of fresh ginger, minced
- 1 tsp turmeric powder
- ½ orange, zest and juice
- 1 broccoli crown, chopped optional
- 1 cup spinach, chopped optional
- 6 cups chicken broth
- 1 cup pasta noodles, I prefer rotini
- 2 chicken breasts, cooked and shredded
- 1 tsp ground black pepper
- 2 tbsp mayo optional
Instructions
- brush chicken breasts with mayo, sprinkle with pepper and cook in the air fryer (or whatever cooking method you prefer) at 400°F for 20 minutes, flipping halfway through
- In a large saucepan over medium heat, saute your onion, celery, and carrots in olive oil for 2-3 minutes, add garlic and ginger, saute for an additional 2 minutes until fragrant
- add turmeric, juice and zest of orange, broccoli and the chicken broth
- bring to a boil, add pasta and simmer for 5-10 minutes or until the chicken is ready
- shred the chicken and add to soup
- add your spinach until wilted, season with salt and pepper as desired
- serve with your favorite saltine crackers.
