Today Let’s Make – Homemade Butter Chicken

Homemade butter chicken is something that I crave almost every week! Now don’t get me wrong I LOVE to support my local Indian restaurants, I just thought…why not try to make this at home?! And it was a major success, it came together in under an hour and was super delicious and healthy!

Cook your chicken thighs in the air fryer for 20 minutes and then add them to your tomato, butter, cream, and spice mixture, simmer for another 20 minutes. Serve over rice with naan.

History of Butter Chicken–

Butter chicken originated in Delhi, the capital territory of India, sometime during the 1950s. During this time, a man named Kundan Lal Gurjal operated a restaurant in the city, called Moti Mahal.

So the story goes, the cooks of Moti Mahal would mix leftover marinade juices with butter and tomato, and then stew the tandoor-cooked chicken in it. It’s unlikely that they had even the faintest idea of what they had stumbled upon, a dish that is now, an internationally-loved delicacy. Proving that often the best things in life are discovered by accident.

this recipe is super simple to make and will definitely satisfy your craving for Indian food. Serve over rice with naan.

Equipment

  • 1 air fryer optional
  • 1 saute pan
  • 1 cutting board

Ingredients
  

  • 2 lbs chicken thighs
  • 1 tsp fresh ground black pepper
  • 5 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ white onion, diced
  • 2 tbsp tomato paste
  • 8 oz tomato sauce
  • 1 tbsp curry powder
  • 1 tbsp garam masala
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 1 tsp cumin
  • ½ cup butter or margarine separate 1 tbsp for sauteing
  • 1 cup cream (I used coconut milk)
  • 1 cup uncooked rice cook according to package
  • ¼ cup fresh cilantro, chopped

Instructions
 

  • Season chicken with fresh ground pepper, spray air fryer basket with oil, cook chicken thighs at 400°F for 20 minutes.
  • cook rice according to package
  • in a saute pan over medium heat, add 1 tbsp of butter and onions, saute 2-3 minutes
  • add garlic and ginger, continue to saute until fragrant about 1 more minute
  • add garam masala, smoked paprika, curry powder, cumin, salt & mix until just combined
  • stir in tomato sauce and paste, add cooked chicken thighs, stir in cream, butter, and simmer for 20 minutes
  • serve over rice with naan. garnish with cilantro.
